1 bag guanciale vinaigrette
1 bag winter squash
1 bag yuzu brown butter dressing
sage and hazelnuts
1 bag chinese wheat noodles
1 bag julienne carrot, ginger, celery, bamboo
1 bag sliced smoked duck breast
1 bag sauce for noodle
1 bag turkey jus
2 jars panettone dessert

Preheat oven to 350C
Pat dry the turkey ballotine and in a large saute pan with oil sear the turkey all the way around. Place into the over for 20 minutes rotating every 5 minutes.
Squash salad: Place squash on baking tray, drizzle olive oil and season with salt and pepper. Roast in the oven for 12-15 mins. Once squash is cooked, place in a bowl and dress with the soy yuzu dressing and garnish with sage and hazelnuts. Plate the dish in your style.
Confit potatoes: roast on a tray or a pan in the over for 10minutes. Place into a bowl and dress with the guanciale vinaigrette
Blanch the noodles in boiling water for 30 seconds. Drain well. Saute the noodles with the julienne carrot, celery and ginger in a saute pan or a wok over high heat for 3 minutes until hot. Add the smoked duck, sautee another 30 seconds and then add the sauce to finish.
Heat up the turkey jus and serve with the ballotine
